Get an inch/pound torque wrench if you're that worried about it. Walperstyle is right, it's barely any torque on those guys. I checked mine at least 4 times because I didn't think it was tight enough haha.

Found a problem, probably the only problem. My intake manifold isn't sealing between the two halves, it's leaking right around my EGR block off plate, I sealed that up the other day but didn't leak test afterwards. I'm replacing the gasket tomorrow, hopefully that will fix most of my issues.

Yes, the stock mafs maxes out around 280-290 whp. What size injectors are you running? It doesn't matter how well your motor is built, knock is going to kill it, and a surefire way to get knock is to max out either your mafs or injectors. I can tell you that 12 psi on a gt35 is definitely maxing out...
